Job Description

 

A poissonier is in charge of handling and preparing all the fish or seafood entrees. He is responsible to prepare sauces that are needed for the fish menu and also able to debone and fillet the fish.

 

Duties

 

  • Wash and prepare all fish and seafood

  • Acquire fresh seafood and fish

  • Prepare all the fish dishes on the menu

  • Prepare and make any sauce that is needed to accompany the fish item

  • Debone the fish

  • Fillet the fish

 

Expectations

 

  • Possess skill and knowledge in seafood and fish

  • Possess good knife skill to debone and fillet the fish

  • Able to prepare sauces to go along with the fish on menu

  • Practice good personal hygiene

  • Takes pride in the job performed
